What to do with 6kg of mandarins?

Last year we went on a  fruit picking adventure with some friends. The fruit of choice for this adventure was mandarins and we had lots of fun.

The only problem is that with three very enthusiastic children it was hard for us to keep the amount of fruit picked in moderation and my kids are not actually huge mandarin eaters. We returned home with 6kg of freshly picked mandarins and no idea what I was going to do with them all.  I posed the question on my facebook page and got some great suggestions back.

In case you ever find yourself with an abundance of mandarins here are four great suggestions of what you can do with them:

  • Mandarin and almond cake – such as this recipe for Mandarin & Almond Syrup cake with Cardamom Cream
  • Mandarin and beetroot salad – such as Beetroot, Mandarin and Spinach or Mandarin, Asparagus and Baby Beetroot
  • Peel and freeze…. Yummy citrus iceblocks.. A bit like frozen grapes or oranges
  • Purée cooked mandarins (with skin) and pop in the freezer. They keep for ages and you can use the purée to make mandarin and almond cakes.

I decided to write my ocean swim events on the kit I decided to write my ocean swim events on the kitchen chalkboard. Partly to remind myself that I need to do more training if I have any hope of swimming 3km+ in 6 weeks time and partly to make these events more visable for the family. Otherwise they will all act like they had no idea I am heading away for some of these!
