Chocolate Zucchini mini muffins

Months and months and months ago I printed off a recipe for Chocolate Zucchini Cake with the idea of trying it out as a lunchbox treat.

I literally copied and pasted the recipe from an online source (no idea what) into a blank word document, printed the page and filed in the random recipe folder I have. I apologise in advance for not giving credit to the original source of this recipe … I have no idea where I pulled it from. This was such a winner in my house that I wanted to share with you.

As I declared on my Peppa Pig Cake post almost every cake I have ever baked has come from a packet, so if I can bake these yummy mini muffins I assure you anyone can!

INGREDIENTS

  • 2 cups of self raising flour
  • 1 tsp salt
  • 1/2 cup Cocoa
  • 1 cup oil
  • 1 1 /2 cups sugar
  • 3 eggs
  • 2 cups grated zucchini
  • 2 tsp vanilla
  • 1 cup of chopped walnuts (optional – I make without to keep them school friendly)

 

INSTRUCTIONS

  • Pre-heat oven to 180C
  • Sift flour and cocoa into large mixing bowl.
  • Mix in all other ingredients.
  • Spoon into a greased cupcake/muffin tray.

 

I made these as mini muffins as my kids are young and won’t eat big muffins. Cooking time for mini muffins is about 15 minutes.
If you are making regular sized muffins try 25-30minutes perhaps. Test with a skewer to see if cooked (skewer will come out clean when ready).

These are super yummy warm from the oven. I freeze the extras in zip lock bags ready for easy lunchbox treat.
My little girls helped me bake this batch so it proved a simple, child-friendly, cooking experience.
